Yam Woon Sen (ยำวุ้นเส้น) - Glass Noodle Salad

A refreshing glass noodle salad with a balance of sour and spicy flavors.

Ingredients
  

  • 200 g glass noodles soaked
  • 100 g shrimp or minced chicken
  • 5 cherry tomatoes halved
  • 1/4 cup onion sliced
  • 1/4 cup coriander chopped
  • 1-2 fresh chilies sliced
  • 2 tbsp fish sauce
  • 2 tbsp lime juice
  • 1 clove garlic minced

Instructions
 

  • Blanch glass noodles until soft, then drain.
  • In a mixing bowl, combine noodles, shrimp or chicken, tomatoes, onions, coriander, and chilies.
  • Add fish sauce, lime juice, and garlic. Toss well to combine.

Notes

Best served fresh with a wedge of lime.
