Massaman Curry (แกงมัสมั่น)

A rich, nutty, and mild Thai curry with aromatic spices and tender meat.

Ingredients
  

  • 500 g beef or chicken cut into cubes
  • 2 cups coconut milk
  • 3 tbsp Massaman curry paste
  • 1 potato diced
  • 1 onion sliced
  • 1/4 cup peanuts
  • 1 tbsp fish sauce
  • 1 tbsp palm sugar
  • Lime juice to taste

Instructions
 

  • Heat coconut milk in a pot and add Massaman curry paste, cooking until fragrant.
  • Add meat and cook until browned. Add potatoes, onions, peanuts, fish sauce, and palm sugar.
  • Simmer until meat and potatoes are tender. Adjust seasoning with lime juice as desired.

Notes

Best served with steamed jasmine rice.
