Gaeng Kari (แกงกะหรี่) - Yellow Curry
A mild yellow curry with coconut milk and turmeric, featuring tender meat and vegetables.
Ingredients
- 500 g chicken pork, or beef, cubed
- 2 cups coconut milk
- 3 tbsp yellow curry paste
- 1 tsp turmeric powder
- 1 potato diced
- 1 onion sliced
- 1 stalk lemongrass chopped
Instructions
- Heat coconut milk and curry paste in a pot. Add turmeric and stir.
- Add meat and cook until it starts to brown.
- Add potatoes, onions, and lemongrass. Simmer until potatoes are tender.
Notes
Serve with steamed jasmine rice.
