Spaghetti Carbonara

A creamy and savory Italian pasta dish made with eggs, cheese, and pancetta.

Ingredients
  

  • 200 g spaghetti
  • 100 g pancetta or bacon diced
  • 2 large eggs
  • 50 g Pecorino Romano cheese grated
  • 50 g Parmesan cheese grated
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 clove garlic optional

Instructions
 

  • Cook spaghetti in salted water until al dente, then drain, reserving some pasta water.
  • In a bowl, whisk eggs, Pecorino Romano, and Parmesan cheese.
  • In a skillet, cook pancetta until crispy, add garlic if desired, then remove garlic.
  • Add spaghetti to the skillet, then the egg mixture off heat, tossing to coat. Add pasta water for creaminess if needed.

Notes

Serve with extra grated cheese and black pepper.
