Gaeng Kari (แกงกะหรี่) - Yellow Curry

A mild yellow curry with coconut milk and turmeric, featuring tender meat and vegetables.

Ingredients
  

  • 500 g chicken pork, or beef, cubed
  • 2 cups coconut milk
  • 3 tbsp yellow curry paste
  • 1 tsp turmeric powder
  • 1 potato diced
  • 1 onion sliced
  • 1 stalk lemongrass chopped

Instructions
 

  • Heat coconut milk and curry paste in a pot. Add turmeric and stir.
  • Add meat and cook until it starts to brown.
  • Add potatoes, onions, and lemongrass. Simmer until potatoes are tender.

Notes

Serve with steamed jasmine rice.
