Khao Pad Pongali (ข้าวผัดผงกะหรี่) - Fried Rice with Yellow Curry Powder
A fragrant fried rice dish with a hint of curry flavor.
Ingredients
- 2 cups cooked jasmine rice
- 1 egg beaten
- 1 clove garlic minced
- 1 tbsp yellow curry powder
- 100 g chicken pork, or shrimp
- 1/4 cup diced carrots and peas
- 1 tbsp soy sauce
Instructions
- Heat oil in a wok, add garlic, and cook until fragrant.
- Add protein and cook until done. Push to the side and scramble the egg.
- Add rice, curry powder, vegetables, and soy sauce, stirring well.
Notes
Serve with fresh cucumber slices for a refreshing side.
