Pad Thai (ผัดไทย)
A classic Thai stir-fried noodle dish with a balance of sweet, savory, and tangy flavors.

Ingredients

rice noodles

tamarind paste

fish sauce

palm sugar

shrimp or chicken
sliced

bean sprouts

peanuts

Lime wedges and chives for garnish
Instructions
Soak noodles in hot water until soft, then drain.
Mix tamarind paste, fish sauce, and palm sugar to make the sauce.
Heat oil in a wok, add shrimp or chicken, and stir-fry until cooked. Push to the side and scramble the egg.
Add noodles, sauce, and bean sprouts, tossing well. Garnish with crushed peanuts, lime wedges, and chives.
Notes
Serve hot with additional lime and chili powder on the side.
